Very slow roasted leg of lamb, with stovetop carrots and tzatziki

P1110862.jpg

Another great one for winter. The butcher had some lovely “easy carve” legs of lamb (which means most of the bone has been removed), so this is what I tried. It would work just as well (or probably even better) with lamb shoulder or just some shanks. This recipe is a conglomeration of years of […]

Daikon, red cabbage and coriander ‘coleslaw’

P1080716

A strangely successful experiment. Fresh grated daikon, red cabbage, chopped coriander. With lots of kewpie mayo, lots of crushed garlic, a little salt. Really good with fish.

Slow roasted lamb shanks with lemon and dill

_1080548

Delicious, rich, soft, dark, sticky meat, served with crispy potatoes and a good blob of rich tzatziki. I’ve never done shanks like this before, but I felt like lamb, and they were very cheap. To start, I prepared the shanks by marinating them in the juice of a few lemons, olive oil, salt, pepper, and […]

Mushroom soup

_1080321

This one is for a vegetarian friend, who complained that she couldn’t read my blog because I always post “too much raw pork”. We do actually eat quite a lot of vegetarian food, but I don’t seem to post it here as often. The various field mushrooms are quite cheap at the market at the […]

Baba ganoush

Home made dip time! Baba ganoush is one of my favourite dips—I love the smoky eggplant flavour, and the silky texture. It is best when the eggplants are done on a barbecue, but failing that (our failure being that we live in a small apartment with no outside space), a gas hob works pretty well […]

Spicy pulled pork with mandarin, guacamole and black quinoa

_1080253

The best of my “Mexican” experiments yet. I got totally carried away today. We had a few avocados sitting in our fruit bowl that needed to be used up, so I decided to make some guacamole: avocado, red onion, lemon juice, salt, hot sauce(s). But then we needed something to go with it, and I’ve […]

Penne with “green” tuna sauce

_1080181

Once again, a dish with a few things that were lying around. I made a green paste by grinding up parsley with a little salt and olive oil, and just threw the other bits together in a pan. The hot english mustard was conceived as a chilli substitute and added a soft warmth (quite different […]

Coconut chicken curry

_1080115

I haven’t made curry for a while – I was quite happy with this one. I have this problem that I never remember exactly what spices and/or quantities of spices I put in my curries, so I can never re-create them. Even with this one, I just used a random collection of things from the […]

Salmon steaks, fennel and basil salad, garlic and ajvar

_1080011

This is what we had for dinner while the casserole is “flavourfying” in the fridge. Plus it’s Market Day today (which makes it both a Cooking Day and a Fish Day). I fried the seasoned salmon steaks in a hot pan with some enormous organic “elephant garlic” cloves. The salad was also simple – finely […]

Roast pumpkin with toasted almonds and olives, zucchini salad

_1070297

A vegetarian meal. The pumpkin and herbs were fresh from my Mum’s garden. I roasted the pumpkin with onion, garlic, and rosemary. For the salad – zucchini (cut with a peeler), lemon zest, parsley and some fresh tomato, plus some lemon juice and delicious olive oil that we bought in Spain. The toasted almonds and […]
