Onion soup

I seem to be turning this into some kind of “soup diary”. Maybe because its winter. Today: Onion soup!


Lots of onions (I think I used about 8): brown slowly in a pot with butter and olive oil. Really slowly: it should take around 45 minutes, give or take. Stir a lot, scraping the sweet caramelised stuff off the bottom.


Deglaze the pot with a good splash of dry sherry, add a mix of chicken and beef stock and a bouquet garni of parsley, bay leaves and thyme. Simmer for around 30 mins, fish out the herbs …


… and eat!
