Zucchini fritters

I tried making zucchini fritters for the first time the other day. I did my typical first-time-recipe-research-thingy of googling around for anything to do with “zucchini fritters”, reading all the recipes, seeing what I liked, then making something up that sounded about right.

All the recipes included zucchini (of course), either grated or very thinly sliced. I opted for grated.

I went a bit off track with the mix: eggs, onion, flour, breadcrumbs, ground fennel seeds, paprika, salt, pepper. I didn’t get the quantities quite right though…

What I ended up with was more of a “zucchini pancake” mix. I had to flatten them out while they cooked, and they took a bit longer to cook than I expected.

Not quite the crispy fritter that I’d expected. Still tasty though! Next time I’ll try using just enough egg and flour mix to bind the zucchini, hopefully with better results.
