Sausage rolls (again) with home-made flaky pastry (again)

This time for my niece’s birthday party.

I made the pastry using the “quick puff pastry” method again.

I was a bit rough and quick with it this time around, and the kitchen was a bit too warm (the butter melted a bit much) – so the layers didn’t really “puff”, but it still had a lovely flaky texture and worked with the sausage rolls.

For the sausage mix, I cooked up onions, carrot and herbs, and (when cool) mixed it through equal parts minced beef and pork.
