Cheese and spinach filo triangles

I’ve got some catching up to do on this blog… these were from a few weeks ago now.

So, this one’s one of those things where most of the ingredients comes out of a packet — because as much as I like making things from scratch, I’m not yet up to making my own filo pastry, feta or ricotta cheese — and we didn’t buy the correct ingredients at the market (it was a spur of the moment thing), so here is some frozen spinach and mint in a packet from the supermarket (not that there’s anything wrong with that).

First I sweated the onions and some herbs de Provence…

… then added the spinach, mint, some parsley. I forgot to buy lemons so used some preserved lemon instead (turns out this wasn’t a great idea, it tasted a little strange, but ok — lemon zest would have been better).

… and extra feta. When I’ve made this kind of mix in the past I’ve used egg to bind it together, but this mix was reasonably stiff so I left it out.

I made a few different sizes, washed them with egg, sprinkled sesame seeds on top, and cooked them for about 20 minutes in a 180 degree oven. They freeze really well and make a great snack.
